Lego my EGGO!!! (OK, its just pancakes…)

Do you ever buy frozen pancakes or waffles to get your kids through the week without having to get up at 5 every morning to cook a huge balanced breakfast? Yeah, me too… but THOSE DAYS ARE OVER!!!

I have discovered, ok well I knew a while ago, but not the point, that you can just  make your own. Its quick, its cheap, and it is so worth it!!!!

Here’s what you need:

Your favorite pancake recipe (I will include one at the bottom that I use frequently)

a griddle or skillet (I use the George foreman electric griddle)

paper towels and parchment paper (you can use JUST one or the other if you don’t have both but the paper towels are the best by far)

plastic freezer bags

OPTIONAL: raisins or other dried fruit

 

Make your pancakes, I like to do them small enough that they will fit in a toaster, but you can make them as big as you want and microwave them, Mix the raisins or other fruit into the batter, you can use fresh fruit if you don’t plan on using the toaster.

place pancakes between layers of parchment paper or paper towels, place a folded up paper towel in the bag on top of the pancakes, and freeze flat. They will be good for several months and only take a couple of minutes to throw together!!! Pull out as needed and enjoy as if they were fresh made!!!

You can use this for waffles, muffins, and most other breakfast carbs! Easy as pie!!!!

My favorite pancakes! Recipe by Rachael Ray!

Ingredients
1 cup old fashioned oats
1 cup all-purpose flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
2 ounces, 1/4 cup, chopped walnuts
3/4 cup sour cream
3/4 cup whole milk
2 large eggs
1 teaspoon vanilla extract
2 really ripe bananas, mashed up
3/4 cup raisins
1/2 stick butter, 1/4 cup, melted, plus additional for buttering skillet
Maple syrup or honey, for drizzling
Directions
Here’s a great tip: if you cannot find really ripe bananas, just nuke them in the microwave for about 15 seconds and they will become super soft for mashing.

Mix dry ingredients, the first 7, in a bowl. In a another bowl, mix the wet ingredients, the next 4. Whisk the wet ingredients into the dry until just combined, then fold in the mashed up bananas and the raisins. Stir in the melted butter.

Heat a griddle over medium heat and brush with additional melted butter. Cook pancakes, each about 1/3 cup, until bubbles form on the top, then turn. Cakes will cook in about 2 minutes on each side. Keep pancakes tented with foil as they come off the griddle to keep them hot. Serve with drizzled honey or maple syrup over the top.
